Juicy, Braaied Mushroom Skewers
Mushrooms, with their ‘meaty’ texture and flavour, are a fantastic vegetarian option when it comes to having braai (otherwise known as barbeque).
Mushrooms are well-known for their immune boosting properties, their anti-cancer properties and strong nutritional power. They come in a large variety, including button, portabella, oyster and more, with shiitake packing the greatest nutrigenomic punch of them all.
They also have a high content of vitamin B2, copper, vitamin B3, and selenium. The vitamin D in mushrooms is higher in those that are exposed to the sunlight. These high anti-oxidant promoting nutrients help with immune support as well as protecting the body from oxidative stress, cancer development and inflammation.
They contain sterols and B-glucans which are good for promoting cholesterol reduction. Mushrooms are also high in adaptogens, which support hormone and stress responses in the body.
To clean the mushrooms, use a damp cloth or paper towel and wipe each one individually. Take care to do this properly.
Ingredients
(6 skewers)
1 tablespoon dried oreganum
1 tablespoon dried parsley
1½ tablespoons fresh thyme
½ teaspoon cayenne pepper
½ clove grated garlic (½ teaspoon)
2½ tablespoons olive oil
2 tablespoons lemon juice
1 box shiitake mushrooms (5 mushrooms)
1 box button mushrooms (250g)
1 box baby portobello mushrooms (150g)
Salt and pepper to taste
Method
1 Soak the skewers in water to prevent them from burning on the braai (barbeque).
2 Grate the garlic, and in a little dish mix it with all herbs, spices, olive oil and lemon juice to create a herb marinade.
3 Wipe the mushrooms clean with a damp cloth or paper towel, then place them into a large mixing bowl.
4 Use ½ to ¾ of the herb marinade, and rub it evenly over the mushrooms, reserving the rest of the marinade for later.
5 Place the mushrooms evenly on the skewers, threading through a variety of mushrooms on each skewer.
6 Place the mushroom skewers on the outskirts of a medium heat braai (barbeque), preventing them from charring.
7 Grill for approximately 10-15 minutes, brushing the remainder of the marinade over them and turning them regularly.
8 Remove from the grill and place onto a serving dish.
